Summertime means I have two extra helpers for staff lunch! Hooray!
Here’s what we had this month:
A huge pile of salad ingredients
Basil Orange Dressing
Cracked Wheat Rolls
Apricots (Sprouts has good sales!)
Citrus Butter Cookies – This is a Pioneer Woman recipe, so you really just have to go to her blog to find it. Partly because that is the kind, right, copyright-friendly thing to do. And partly because she writes recipes way better than I do!!
If you only make one thing, make the dressing. You won’t regret it, even if it takes a whole basil plant. I promise.
I was delighted to have the kids join me for our only staff lunch of the summer. It will be so strange to do the next one entirely on my own–haven’t had that happen in 8 years! Here’s what we served:
Grilled Hamburgers and Bratwurst (Hooray for Tony the grilling king 🙂
Tortilla Chips with Mango Salsa
Southwestern Chopped Salad with Cilantro Lime Dressing (I used avocado instead of yogurt in the dressing)
Strawberries, Peaches, and Basil with Orange Vinaigrette
Orange Creamsicle Cookies
If you only try one recipe, I’d go for the Mango Salsa. We’ve eaten it twice since then, although haven’t tried it yet on hot dogs like the original recipe suggested.
Nathan was happy to help with one more staff lunch before heading back to school. He and Katya both enjoy seeing all their “friends” on staff, and I like to take them (even if they aren’t as much help as they think they are!!) Katya did figure out how to put tablecloths on all the tables by herself, a feat that surprised me since she is more than a foot shorter than the tables!
At Nathan’s request we had tacos, one of his favorite meals. Not many recipes involved, especially since dessert was ice cream sandwiches from the church picnic, but I did make a few salsas to go along with the meal. Here’s what we had:

Today was our monthly staff lunch, and I experimented with a new curry recipe. It turned out to be an OK experiment! Here are the recipes I used

Nathan was happy to be included, since he misses staff lunch during the year. I was grateful for a little extra help from some 5th and 6th grade students that were with Than learning about how the church works.
