Summertime means I have two extra helpers for staff lunch! Hooray!
Here’s what we had this month:
A huge pile of salad ingredients
Basil Orange Dressing
Cracked Wheat Rolls
Apricots (Sprouts has good sales!)
Citrus Butter Cookies – This is a Pioneer Woman recipe, so you really just have to go to her blog to find it. Partly because that is the kind, right, copyright-friendly thing to do. And partly because she writes recipes way better than I do!!
If you only make one thing, make the dressing. You won’t regret it, even if it takes a whole basil plant. I promise.
Here is the staff lunch menu for this month. I missed having it in December and January, so it is nice to be back!
Caesar Salad with homemade dressing and homemade croutons from The Food Lab, my new favorite cookbook
Cara Cara Orange Slices
Raspberry Chocolate Chip Squares
Cherry Pie Bars
In case you haven’t noticed, the last twelve posts have been a very brief monthly wrap-up combined with a cookie recipe. Here is a list of all the posts:
January-Hot Cocoa Cookies
February-Raspberry Almond Thumbprints
March-Cream Cheese Almond Bars
April-Sugar Cookie Bears
June-Candy Cane Thumbprints
August-Mexican Wedding Cakes
September-Peanut Butter Pretzels
There are several other holiday treats that didn’t make this year’s list, so if you ate something at my house and I didn’t share the recipe, let me know and I’ll put it up!
Thanks to several recipe requests, I’m publishing a menu with links to the recipes I used for our recent teacher lunch. Enjoy!
Beef Soup Provencal
Herbes de Provence blend
Sweet Potato Kale Salad
Whole Wheat Quinoa bread (I didn’t post this recipe–it is from a new Test Kitchen book I got at the library)
Salty Caramel Peanut Bars
Caramel Apple-Nut Bars
After an incredibly long pause, I am intending to go back to posting my menus from staff lunches! I still cook once a month for our church staff, and I am often asked to share the recipes. Blog transitions over the last year or two resulted in the loss of all my previously posted recipes, so I am working on gradually rebuilding my online collection. (Requests are happily honored). Here is the menu (with recipe links) for this month:
All-American Beef Chili
Chili Toppings–sour cream, shredded cheddar cheese, diced red onion, minced cilantro, Tapatio hot sauce
Salad de Colores
Fresh McIntosh Apples (thanks, dad!) or Strawberries
