I was delighted to have the kids join me for our only staff lunch of the summer. It will be so strange to do the next one entirely on my own–haven’t had that happen in 8 years! Here’s what we served:
Grilled Hamburgers and Bratwurst (Hooray for Tony the grilling king 🙂
Tortilla Chips with Mango Salsa
Southwestern Chopped Salad with Cilantro Lime Dressing (I used avocado instead of yogurt in the dressing)
If you only try one recipe, I’d go for the Mango Salsa. We’ve eaten it twice since then, although haven’t tried it yet on hot dogs like the original recipe suggested.
