Quick Lemon Crisps

Soft, lightly lemony cookies look especially cute with sprinkles baked in.

Ingredients

2 cups all-purpose flour
3/4 teaspoon baking soda
1 pinch salt
3/4 cup shortening 1 cup white sugar
2 (3 ounce) packages instant lemon
pudding mix
3 eggs
3 tablespoons Lemon juice
Sprinkles (opt.)


 

Instructions
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Sift flour with baking soda and salt. Cream shortening, and then add sugar and pudding mix. Cream until light and fluffy. Add eggs and lemon juice and mix well; then add flour mixture. Mix until well-blended. Drop teaspoonfuls of dough onto greased baking sheets. (My smallest cookie scoop makes a good size--cookies spread out quite a bit while baking). If desired, top each cookie with a few sprinkles and press gently into dough.
3. Bake for 8 to 10 minutes in the preheated oven.

notes:  Can also make this with other flavors of pudding (obviously the lemon juice would be left out if you're making chocolate or pistachio or something!!)
