Homemade Marshmallows

Deliciously moist and light marshmallows with lots more richness than the store-bought ones. Worth the extra work, especially to make uniquely flavored and shaped treats.

Ingredients

3 pkg Unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon kosher salt
1 tablespoon pure vanilla extract
1 teaspoon Flavored extract (opt, try orange for starters!)
Confectioners' sugar
Dipping chocolate

notes:  Don't get the corn syrup mixture too hot--it will harden instead of mix with the gelatin!! Add food coloring if desired with the extract to tint the marshmallows. Very yummy dipped in chocolate. A little sticky to cut with cookie cutters, but kitchen shears do a fine job.
